Sustainability at Sky Garden

At Sky Garden, creating sky-high experiences goes hand in hand with caring for our people, our communities and our planet.

We are working to embed sustainability in our operations, from the ingredients we source and the menus we create to the way we operate our restaurants, events and venues. While we know there is always more to do, we are committed to continually improving and making a positive impact through meaningful action.

Recognised by the Sustainable Restaurant Association

In June 2026, Sky Garden was awarded a Two Star Food Made Good Standard by the Sustainable Restaurant Association.

This independent framework recognises hospitality businesses that demonstrate a strong commitment to sustainability across their operations. Achieving a Two Star rating is an important milestone in our journey and reflects our ambition to create lasting positive impact for people, communities and the environment. We are also proud to announce that our ground floor restaurant Larch was awarded a One Star Food Made Good rating.

What is Food Made Good?

Food Made Good is the world’s leading sustainability standard for the hospitality sector. It provides a comprehensive 360-degree assessment of how food and beverage businesses operate, measuring environmental, social and ethical impact across ten key areas.

The framework focuses on three core pillars:

  • Sourcing –  choosing ingredients responsibly and supporting sustainable supply chains.
  • Society – creating positive impact for employees, suppliers and local communities.
  • Environment – reducing waste, conserving resources and lowering environmental impact.

As part of the rating process, our operations underwent a detailed independent audit. Led by our Impact Manager, Alexandra Yepez-Simborth, the assessment explored every aspect of our business, from sourcing ingredients and menu development to supporting communities and reducing our environmental footprint.

Charity Partnership: Chefs in Schools

This school holiday season, we’re proud to support Chefs in Schools, our strategic charity partner for 2026.

Who are Chefs in Schools?

Chefs in Schools is a UK charity transforming school food and food education. By placing professional chefs in schools, the charity helps redesign school lunch menus, trains kitchen teams and teaches children about cooking, nutrition and where food comes from.

Their work inspires healthier eating habits, supports children’s wellbeing and helps create a more sustainable future through better food education.

How we’re supporting the charity

Guests dining in our restaurants can add a voluntary £1 donation to their bill, with every contribution going directly to Chefs in Schools.

Alongside fundraising, we’re proud to support the charity through the expertise and hands-on involvement of our chefs, helping make delicious, nutritious food accessible to more children across the UK.

Meet Our Sustainability Team

Clare Clark – Director of Sustainability

As Director of Sustainability for Rhubarb Hospitality Collection, Clare Clark leads the development and delivery of our sustainability strategy across the business.

A recognised leader in sustainable hospitality, Clare brings extensive experience across luxury food service and sustainable food systems. Her work spans food, energy, waste and water, driving measurable environmental improvements while enhancing the guest experience.

She is passionate about delivering meaningful, scalable change across the hospitality and live events sectors.

Alexandra Yepez-Simborth – Impact Manager

As Sky Garden’s Impact Manager, Alexandra also leads Workforce Integration and Health & Safety, helping embed sustainability into every aspect of our operation.

Alexandra works closely with teams across the business to implement practical improvements, encourage innovation and build a culture of continuous progress.

She played a pivotal role in achieving our Food Made Good Standard certification and continues to lead the programme of work that will help us further strengthen our sustainability performance in the years ahead.
